PIGALITO Grand Opening

by Cazador on September 26, 2010

Regalito is announcing the Grand Opening of our latest effort, PIGALITO. Same location, same great flavor and it’s all about the Pig!

PIGALITO

Every Tuesday, beginning October 5th, PIGALITO will honor free-range, sustainably sourced pig farming and the market stalls which are a staple of eating and shopping in Mexico by slow roasting a half Niman Ranch hog, and bringing it into the kitchen for immediate preparation and display.

PIGALITO’s menu will be inspired by the markets of Mexico that millions of people converge on daily, and especially on Saturdays. Where stalls are filled with local chefs producing great food, passages are crammed with people doing their daily shopping amongst bins overflowing with chiles and fruits and butchers are selling meat that was on the hoof just hours before.

PIGALITO was inspired by Chef Thomas Pena’s recent trip to Des Moines, Iowa for the 12th Annual Niman Ranch Hog Farmer Appreciation Dinner. The farmers were honored for their commitment to raising free-range, sustainably sourced hogs.

PIGALITO’s simple pork focused menu will consist of Tacos de Carnitas, Tortas de Puerco, Gorditas, and other staples of the market stalls.

Please join us on October 5th, from 5-10pm, to help us celebrate PIGALITO’s Grand Opening!

Niman Ranch Hog Farmer Appreciation Day

by Cazador on

Chef Thomas Pena was recently invited to the 12th Annual Niman Ranch Hog Farmer Appreciation Day. The event was hosted by Paul Willis (Niman Ranch’s Founding Hog Farmer) at his free-range hog farm in Des Moines, Iowa.

Thomas joined other local and regional farmers and chefs from across the nation to recognize the people who raise these beautiful hogs sustainably and with honor.

Niman Ranch Free Range Hogs

The trip gave Thomas the opportunity to learn about the Niman Ranch free-range techniques and see the large open spaces of rolling grasslands where these happy pigs are raised.

Regalito has always been committed to using sustainably sourced products and this trip only has re-invigorated our charge and inspired us to honor the pig.

Gil Hovav is one of Israel’s leading Culinary Journalists, food critics and television personalities and also the author of three best selling novels. To celebrate the Out in Israel LGBT Pride Week we’ll be serving a four course fixed price menu comprised of a traditional Shakshouka Omlette with peppers and Merquez Sausage, by Gil Hovav, matched with Guacamole, Tortillas Soup & Churros by Regalitos own Thomas Pena.

The cost will be $40 per person (Wine & Agave Margaritas available separately). There will also be a $25 option served sans starters & desert. The night will be broken into two seating time periods at 6pm (6:00, 6:15, 6:30) and 8pm (8:00, 8:15, 8:30). Each seating will be addressed by Gil Hovav.
